When Rosalind got started we were focused only on using natural leavenings. Then when we met the Dad behind Dad's Luncheonette things changed. We began experimenting in the rectangular bread world. Good things happened.
Dad's bread is our organic sandwich bread. It's made from organic bread flour, milk, butter, yeast, water, and salt. More often than not we add a small percentage of whole grain flour to the batch. Usually purple barley, but sometimes other grains like spelt, kamut, or rye. C'mon Sam.
